Rice with Tomatoes all’ Indiana 1912

This is a short text, about 60 pages, 5×8, but don’t judge this book by its cover. Tucked inside are some amazing recipes packed with flavor!

Here’s a nice play on your typical white rice dish:

Ah! I cut off the last sentence: Bake in a moderate oven for a good half-hour. Probably want to substitute the 7-8 tomatoes for a can of tomatoes.

The recipe uses allspice, which will give this a savory, rich flavor. Add the butter and bread crumbs, and it should make a very nice casserole.
