Here’s a nice play on your typical white rice dish:
Ah! I cut off the last sentence: Bake in a moderate oven for a good half-hour. Probably want to substitute the 7-8 tomatoes for a can of tomatoes.
The recipe uses allspice, which will give this a savory, rich flavor. Add the butter and bread crumbs, and it should make a very nice casserole.

I made a rice with tomato dish yesterday, and boy was it good! I didn’t bake it though.

How did you make yours? I have leftover rice and may make this dish tonight with meatloaf.

I actually cooked the rice using tomato juice rather than water and added chopped tomatoes and herbs at the end. You can season it any way you like! If the rice is already cooked, I’d probably add a little tomato sauce and some tomatoes. 💕
