Coffee Monday: Perfection 1912

Dear Diary: – The holidays are officially over. Every Monday deserves coffee. To wit: Coffee Perfection recipe included below.

“To have coffee in perfection it must be freshly roasted and freshly ground, as coffee very quickly loses its flavor. The coffee must not be boiled but only infused in boiling water.” Take note!

Chicory was used as a coffee substitute during the Civil War when there was a coffee shortage from blockaded imports and rampant inflation. No, it doesn’t have the benefit of being caffeinated. Which I think is just a cruel joke of sorts for a Monday morning.
