Meringue Cookie Time!
Let’s say you’ve made a delicious pudding or custard from scratch that called for 5 egg yolks. What do you do with all of those egg whites?
Ingredients:
- 5 egg whites
- 1/2 tsp. cream of tartar
- 1 tsp. vanilla
- 1/2 cup sugar
Beat eggs and cream of tartar together until foaming, slowly add sugar and continue mixing until stiff peaks form. Add food coloring and vanilla, continue to mix until incorporated.
Spoon/pipe onto parchment-lined baking sheet. Pop into 225F oven for 2 hours.

This recipe comes from an interesting collection, Everywoman’s Cookbook (1922). It was a originally sponsored by the National League of San Francisco, a woman’s group that was part of the larger social movement. Their members would have been involved in women’s enfranchisement, building community, and (socially acceptable) social activism dealing with the home and neighborhood – think orphans, schools, and church. These groups allowed women to take on leadership roles outside of the home, and members would find a welcome space to share ideas and promote issues important to women. Women’s leagues were popular through the 1950s, but fell out of favor as more women entered the workforce and had less time to volunteer.
Today, women’s leagues continue to partner with nonprofits to address issues surrounding their communities, to include domestic violence, homeless youth, and drugs.

I had made a huge one, cut it open, and put chocolate pudding in it and put the top back on
…it did not last long 😉

The kids in our family love meringues, and these are really pretty! I think they like the marshmallow-like texture, and chocolate would be really good in them.

Popular with kids! Yes! Agree! Did I mention that when I went to bed there was a tray with 30+ cookies, and that when I woke up there was 1?
