Easy Golden Sunshine Cake Recipe.
The Girl turns 16 today. Wow! How did that happen? Cake time! I thought I had purchased a gluten free cake mix, but discovered that it was, in fact, a pizza mix lurking in the corner of the pantry. Oops.
Plan B was to make a golden sunshine cake that we had made before that was quite good. However, I grabbed the wrong recipe.
This golden sunshine cake had a few red flags while I was making it. First, it only uses a cup of flour. Second, there is no oil, or butter. I kept going back to check the recipe, but I did follow it exactly. Results in the picture above.
Hmm…
“Mom, why did it clunk?”
Well, I guess it’s fried chicken with frosting and candles for dinner!

It’s not entirely uncommon with gluten free baked goods, but this was a new level of clunk! 🙂

It was a lovely day! We have one set of ‘birthday dishes’ for the birthday person to use on his/her special day – gilt porcelain, tiny little tea cup, saucer, salad plate, bread plate, dinner plate – it’s a fun tradition. 🙂
