Stuffed Tomato Recipe

Why aren’t there more stuffed tomato recipes? So many people have an aversion to stuffed peppers, maybe they unfairly get lumped into the same taste category? This stuffed tomato recipe is similar to the tomato and egg recipe (1900), but with a heartier twist that can make it a gluten free, vegetarian meal (omit the peppers if you don’t like them).

I’ve been waiting to make this recipe for some time – actually I was waiting for the tomatoes to show up in our CSA produce box. Just got an email notifying us that the boxes were suspended for the winter break – unexpectedly early this year (I’m in a non-snowy part of CA) – due to strange weather patterns affecting the produce quality.

Bummer.

So, I’ve posted the recipe with the hopes that at some point I – or you – can get your hands on some big, meaty tomatoes to try this one out!
