Spice Cake Recipe.
This spice cake comes out something like a coffee cake. Not overly sweet and mild. Spice Cake No. 2 looks to be a bit spicier! The raisins are a nice touch. Big hit with The Daughter and The Son.
Ingredients
- 3 cups gluten-free flour, sifted (regular flour if you’re so inclined)
- 2 cups sugar
- 1 cup butter, melted
- 3 eggs
- 1 cup water
- 1 tsp baking soda
- 2 cups raisins/currants
Bake for 35 min. in a 350 degree oven.
Notes: Add more spice. 2 tsp. of cinnamon was hardly enough to make it taste like any spice at all. Consider doubling that amount and adding nutmeg and/or cloves.

It was really delicious – a little light on the spice was my only correction to the recipe. Paired nicely with my morning coffee. I took the stale leftovers, broke it up, and put it in the freezer for a bread pudding. That, I’m hoping, will be delicious! Hope all is well on your end ~
