Notes on Soup Making.
Any soup fans out there? We’re big soup people in my home. Usually made out of weekend leftovers of some sort prepared in the slow cooker and smelling like heaven after a day at work. Today’s post has a longer excerpt because it is (1) entertaining, and (2) thorough. It actually explains how to make soup correctly by bringing to a slow boil and skimming. Both tips are frequently mentioned on cooking shows.
Notice how the author cites a separate author, Nessmuk, and then interjects with different instructions? Cookbook authors were often highly competitive and took their rivalry into the public eye by contradicting each other in their publications.
This excerpt hails, once again, from Camp Cookery c. 1910. As an added bonus, I’m throwing in a recipe for squirrel soup. It is a camping cookbook, after all!
