July Menu 1884.
Welcome July! This month’s menu comes from the Franco-American Cookery Book; Or, how to live well and eat wisely every day of the year (Check out last July’s menu, here).
Here’s to summer!
This is a truly seasonal menu, you find a vegetable soup with asparagus and carrots, boiled artichokes, and raspberry ice-cream. Yum!
The terrapin pie is pretty involved. I love that you need to ‘fry briskly’ and ‘besprinkle’.
The presentation on the Curry of Lamb with Rice is quite something – a ring mold of rice with the curry inside the middle! Probably not a week-night dish, but something novel for the weekend.
Here’s my favorite: Boiled Artichoke. The recipe makes specific reference to artichokes being in-season. The preparation is almost identical to what I currently do.
Roast Ribs of Beef: Ah ha! This is why you need a meat saw in your kitchen. When was the last time you had beef ribs?
I’ve never heard of Hessoise Sauce, but it could be Hessian Sauce. Hmm…
Really? Who has room for dessert?
Happy cooking!
