For all of you macaroni and cheese lovers out there, here’s one for you! My nieces are big fans, but this isn’t your typical box style mac & cheese…
Talk about a unique preparation! The sauce and cheese are layered separately throughout the dish.
Here’s another macaroni and cheese recipe from 1881 that combines the cheese and sauce.
As a gluten free family, we only do gluten free pasta and eschew the boxed mac and cheese – the packaged offerings are all pretty horrid. Homemade is definitely the way to go! Will be giving this one a try sometime in the near future and reporting back.

I’ve gotten artisan macaroni that comes in long strands, then you have to break it up. It was the best macaroni I’ve ever had. 🙂

Oh, no!!! Never rinse cooked pasta! It washes away all of the beautiful starches that help the sauce adhere!! 😢😢😢
As for the boxed gf mac and cheese, if you break up a stick of softened butter and stir in vigorously with some full-fat milk after you’ve added the cheese it makes it a LOT easier to scrape into the garbage.

Me thinks perhaps instead of sticking to one’s ribs, it sticks to the *garbage* much better. :o)
Love where he took us with words, imagination, and creativity. I for one will never look at a box of mac and cheese in the grocery store the same way again.
