The first piles of cucumbers showed up in our farmers market this week! Looking for ways to enjoy them beyond salad? How about frying them up and serving them on toast?

Cucumber sandwiches are popular in England, especially at tea. They also serve them at cricket matches in the UK and India. Slice thin and butter the bread else it gets soggy.
For me, nothing beats a big sour dill pickle in the cucumber world. I used to go to a deli in my hometown that had a huge jar of them on the counter and it was great with a Reuben or a turkey club. A couple of teaspoons of pickle brine added about halfway through sautéing works really well with mushrooms.
It’s 8a here and now I want a pickle…😠

You are absolutely right! What was new to me is that they are fried, first. I thought you always ate them raw… I think I’d prefer them raw, though.
