Homemade Cherry Wine.
Looking for a cherry wine recipe? This one looks like it has potential. The primary fermentation is spot on in terms of process. I love how they burry it in sand to keep the must cool and then top it with a vine leaf – what imagery! The recipe even calls for racking, or drawing off the wine clear into bottles. You would need to add inoculation with your own yeast. Maybe a Montrachet?
Alas, I do not have access to cherries, otherwise I would give this one a go.

What does it mean to “bruise” the cherries and currants together? Mash them up? And what’s a bung?

Correct! Basically you mash them to extract the juice. A bung is a stopper on a jar.
