Potato Pudding ~1877

Potato Pudding Recipe.

Note: 41 ounces is about 2.5 lbs. That’s quite a bit of potato! Perfect for leftover mashed potatoes. 4 ounces of butter is 1 stick.

Will post this with every intention of coming back to experiment. If it comes out edible, has potential as a gluten free dessert.

I just finished watching Lords and Ladles on Netflix where professional chefs recreate a dinner menu from 150+ years ago and serve in stately Irish castles. They made a similar recipe – a sweet potato recipe. This would be similar, I imagine.

Highly recommend the series for those interested in cooking from the days of yore. Feel good, family appropriate.
