Lots of early coffee recipes use various parts of eggs for fining and flavoring. Whipped cream isn’t uncommon, but this is the first recipe I’ve come across that calls for a meringue and whipped cream concoction.

It is quite strange, to mix meringue with whipped cream. I can’t see how it can keep together. Maybe they mixed it just before serving?

I have no idea – I had the same issue with whipping the egg whites into mashed potatoes, didn’t work very well.
