To Choose and Prepare Crabs.

Thinking about crab for the New Year feast? Here are some general considerations. Oddly enough, the actual preparation of removing the meat and mixing it with oil, vinegar, salt and pepper, and cayenne pepper – then placing it back in the shell – was how it was prepared when I lived in Ecuador. No eggs, though.
