Soupon, or cornmeal pudding, is made like grits or oatmeal. The delightful part of this recipe is the story. I imagine that Mrs. Corwen was quite pleased with herself to be able to include this in her book. Enjoy!

I love how fancy the title of “soupon” sounds… And then we realize it’s pretty much cooked cornmeal mush. Marketing at its finest, even in the 1800’s.
